The major benefits of employing a young apprentice is what they bring to the business is something new, vibrant, young, up-and-coming, ambitious, and these things are really important when you want to instil the moral compass of why they’re doing it as a professional career, and guide them in the most correct way to set them up for success.

Apprentice, Jake
I’ve enjoyed cooking from a young age. It’s something I want to do for the rest of my life. Dane has supported me through the whole lot. It’s something I enjoy doing. We have a pizza oven out the back, a wood-fired pizza oven, and I normally do that in the summer, which is great. My role is desserts and starters.

Jake’s really blossomed and in a positive manner. We’ve seen him start from the KP position, which is where every good chef should start from, and then focussed on Jake’s progression through the kitchen. He has been very diligent in each aspect of sections, which is part of the process of having a professionally run kitchen. He has stepped up amazingly and is very supportive and has always put his hand up first, which I think is a good trait within a team-effort. There’s no I in team is there? And, what’s your favourite slogan?
